Today's recipe is Pumpkin Pie Bars. They are exactly what they say: like pumpkin pie, but in bar form. Yummy and easy to make.
1 1/3 c. flour
1/2 c. firmly packed brown sugar
3/4 c. sugar, divided
3/4 c. (1 1/2 sticks) cold butter
1 c. oats
1/2 c. chopped pecans
1 8-oz. package cream cheese, softened
3 eggs
1 15-oz. can pumpkin
1 Tbsp. pumpkin pie spice (or 1 tsp. each cinnamon, nutmeg, and allspice)
Preheat oven to 350 degrees. Line 13x9 baking pan with foil, leaving extra on the ends to make handles. Mix flour, brown sugar, and 1/4 cup of sugar in a medium bowl. Cut in butter until mixture resembles coarse crumbs. Stir in oats and pecans. Reserve 1 cup of oat mixture. Press remaining mixture into bottom of pan. Bake 15 minutes. Beat cream cheese, 1/2 cup sugar, eggs, pumpkin, and spice in small bowl until well blended. Pour over crust. Sprinkle with reserved crumb mixture. Bake 25 minutes. Lift from pan using foil handles. Cool completely.
Cut into 24 bars.
